Fried Udon Served with Mushroom Meatball

Cooking Ingredients

  1. Bring a large pot of water to boil and cook Udon noodles.
  2. Ready all the ingredients and set aside.
  3. Heat oil over medium-high heat and add onion and cook until translucent and soft.
  4. Add cabbage and carrot strips and stir fry until coated with oil. Then add shiitake mushrooms and scallion. Stir fry until vegetables are lightly wilted.
  5. Microwave the plant-based tomato mushroom meatballs for 3-4 minutes.
  6. Add Udon noodles and also plant-based tomato mushroom meatballs into it, combine well with all the ingredients.
  7. Add freshly ground black pepper, 3 Tbsp mentsuyu, and 1 tsp soy sauce and mix all together.
  8. Serve on a plate and sprinkle bonito flakes. Garnish with red pickled ginger on the side if you like.
